Simple Sunday Scran | Chicken & Chorizo Traybake
Who really wants to cook a complex meal on a Sunday?
This week’s Simple Sunday Scran is a Chicken & Chorizo one-tray-wonder from BBC Good Food.

Serves: Four
Ingredients
140g cooking chorizo
2 red onions, cut into wedges
4 garlic cloves, left whole
4 chicken thighs
4 chicken drumsticks
4 medium potatoes, unpeeled and cut into wedges
2 rosemary sprigs
2 tbsp olive oil.
Instructions
Stage 1:
Heat oven to 220C/200C fan/gas 7.
Cut the chorizo into the desired shape, we recommend circular disks. Add the onion and garlic to the bottom of a roasting tin.
Place the chorizo, add the chicken, potato, rosemary and a couple of grinds of black pepper.
Drizzle with olive oil, then bake for 45 mins.
Stage 2:
After half of the cooking time, remove the food from the oven, give everything a good stir and then put the food back in for the remainder of the time.
