Gluten Free Goodness | Banana Waffles

Our gluten free recipe of the week: Banana Waffles
Prep: 10 mins
Cooking time: 20 mins
Serves: two
Ingredients
1 ripe banana
2 eggs
1 egg white
112g almond flour (swap in for any flour of your choice)
1 scoop vanilla protein powder
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt.
Instructions
Stage 1:
Sift the flour, baking powder, cinnamon and salt into a large bowl. Stir to combine.
Stage 2:
Beat the eggs and banana until just combined. Pour the wet ingredients onto the dry and fold in until just combined. Leave to rest for 5-10 minutes.
Stage 3:
Put a nonstick griddle pan over a medium-high heat (tip: if you don’t have a griddle pan, just use a frying pan to make pancakes!). Add a cooking oil of choice and tilt to coat the pan. Pour in the batter and reduce to a medium heat. Cook for 5 minutes or until golden. Carefully flip the waffles over to cook until golden, on the other side.
Stage 4:
Serve with desired toppings, we love to add blueberries & honey to satisfy our sweet tooth!
